Easy Peasy Coffee Cake

Allllllllllllrighty then…

As you’ve seen I’ve been lacking in posting for a bit – sickness has drained me of my creative juices and my cooking skills as it seems because I tried SEVERAL different recipes to share with you folks this week and they were ALL a flop!

One of the recipes I attempted was a coffee cake … it looked so tasty and easy to make on the page but came out gummy and not so good ūüė¶ ¬†(My daughter did enjoy the strudle topping though).

After my fail, my hubby mentions to me that his mom has an AWESOME Coffee Cake recipe that I should try… so I called her up, got the recipe and this morning (patting myself on the back for waking up early) and I made it! ¬†SOOOOOO Tasty!

The recipe is as follows…

Strudle topping

  • 1/2 c. brown sugar
  • 2 Tbsp flour
  • 2 tsp cinnamon
  • 2Tbsp melted butter

Mix till crumbly, set aside.


  • 1/4 c¬†vegetable¬†oil
  • 1 beaten egg
  • 1/2 c milk
  • 1 1/2 c flour
  • 3/4 c sugar
  • 2 tsp baking powder
  • 1/2 tsp salt

Combine wet. ¬†Combine dry. ¬†Mix together. ¬†Pour into a greased 9×9 dish. ¬†Sprinkle w/ topping. ¬†Bake at 375 degrees F for approx. 25 minutes (or until toothpick comes out clean).
